Chef behind Sheraton’s culinary creations

The journey of Danish Merchant, Director of Culinary at Sheraton Grand Doha, from Mumbai streets to Doha’s finest hotel has taken him through continents, kitchens and mutitudes of flavours.

From traditional Middle Eastern dishes to international flavours from Asia, Europe, and beyond, Qatar’s culinary landscape is a true reflection of its vibrant, multicultural population.

And no chef reflects the diversity and immensity of this culinary reality better than Danish Merchant, Director of Culinary at Sheraton Grand Doha, which has one of the country’s oldest fine dining restaurants, which was inaugurated on 22 February 1982.

“Food has always been more than just sustenance, it’s a reflection of where we come from and a celebration of where we’re headed. In Qatar, the fusion of cultures through food is truly special. Every dish we create tells a story, blending tradition with innovation, and it’s that unique mix that makes this culinary journey so rewarding,” Merchant told News Trail.

“For me one of the most exciting aspects of working in Qatar is the opportunity to blend different flavors and traditions to create something truly special,” he says.

With a career that has taken him across continents and kitchens, his love for food and deep commitment to authentic flavours have made him a standout figure in Sheraton.

Merchant’s culinary journey began in the vibrant streets of Mumbai, where his passion for cooking was sparked during his childhood. Growing up surrounded by the rich aromas of street food and the festive feasts of Indian celebrations, he developed an early connection to the communal joy of sharing meals. This sense of togetherness, fostered through food, became the foundation for his decision to pursue a career as a chef.

Working with a team of over 100 culinary professionals at Sheraton, he believes that the best dishes often come from a bit of chaos and a lot of passion. His kitchen is a space where everyone’s ideas are welcomed, and this sense of camaraderie is what makes the Sheraton Grand Doha’s dining experience stand out. The teamwork and creativity that go into every dish ensure that each guest leaves with a memorable experience.

At the same time, what defines his culinary style is his own unique touch. “My culinary style is simple and homely, centred on authentic flavours,” he added while talking about his signature dish.

Merchant assumed the role of Director of Culinary at Sheraton in January 2021, bringing with him years of experience from working in international hotel chains. Leading a team of chefs from various nationalities has enriched his culinary approach, making his kitchen a melting pot of ideas, techniques, and flavors.

Hailing from India, he brings a slice of his childhood to Qatar with a signature dish inspired by the summer flavours of Alphonso mango. This dish is a fusion of cultures, combining fresh local Snapper with a tangy burnt mango basil salsa. The creation not only represents his Indian roots but also highlights his commitment to sustainability through the use of locally sourced Qatari ingredients.

Merchant also says a chef always evolves, constantly experimenting with and adding to the flavours to satisfy the customers.

“Innovation and creativity are key to my success as a chef, and I constantly seek inspiration from local markets and seasonal ingredients,” he muses.

His menu is refreshed every season to keep the dining experience exciting, with new dishes that showcase the vibrant flavours of the region. At the Sheraton, his team is tasked with maintaining the highest standards while continuously pushing the boundaries of culinary creativity.

As one of the most prestigious and oldest hotels in Qatar, what are the special dishes at Sheraton? “One of our standout dishes is the Omali, a traditional Middle Eastern dessert made from layers of pastry soaked in sweetened milk and topped with nuts. The menu as a whole is a reflection of the region’s rich culinary diversity, with influences from Japanese, Thai, Indian, Lebanese, and Persian cuisines all making an appearance. This variety speaks to the multicultural environment of Qatar,” Merchant says.

Having worked in Qatar for almost seven years, he has seen firsthand how the country’s dining culture has evolved. The arrival of international events like the FIFA World Cup brought a surge of diverse culinary influences, making Qatar a true culinary hub. He has learned to embrace this diversity, incorporating international flavors into his menus while staying rooted in local traditions.

Dining in Qatar, he says, “is more than just about the food, it’s about community”.

As he continues to lead the culinary team at Sheraton Grand Doha, his passion for food, creativity, and diversity remains at the heart of everything he does. Each dish served is more than just a meal; it’s a reflection of his journey, the team he leads, and the vibrant, multicultural world in which he thrives.
